What’s for Dinner Tonight?

So I didn’t finish the white bean soup yesterday but I will tonight.

Making a half sandwich to go with it: roasted chicken breast from the freezer, Muenster cheese, avocado, Boston lettuce and tomato on dark rye. Mashed some of the avocado with sour cream, yogurt and chopped cilantro to use as a mayo substitute.
 
This sounds like something my males would love. Recipe?

Last night I threw the rest of the shredded roast/gravy over mashed potatoes, topped with some carrots I roasted on my lunch hour. They had buttered bread with it

I had a scoop of potatoes, with the rest of the carrots. And then I had a bowl of pickled beets. I finished up with a scoop of Cool whip topped with melted peanut butter.

Was not feeling inspired. Gotta restock/cook today for the next few days since I have to work from the office tomorrow And won't have time.
No recipe. We were pressed for time after work and grabbed one of those bagged voila meals. They have the cheesy chicken and veggie (with rice) casseroles and then the skillet meals.
 
Last night we took my oldest sister out to dinner. She had chopped steak w/mushroom gravy, broccoli cheddar soup & mac-n-cheese, DH had a burger w/ fries & I had Filet tips w/ peppers & onions, broccoli salad & baked potato.

Tonight we had beef stroganoff & steamed broccoli.
 
It is so good. One year some of the guys from the neighborhood went fishing this time of year to the same lake and the walleye were hitting. It was hockey playoffs and our team was in. We normally show the playoff games in our driveway and the neighbors gather. That night they got home shortly before game time. My husband and I were rushing around setting up the screen and equipment, one of the guys was filleting all the fish at his house and another guy hauled over his big turkey fryer to the driveway and they fried up these huge pieces of fish for sandwiches. We still talk about that night. Those were the days that our team made a run almost every year.

My parents did a lot of ocean fishing on vacation when I was growing up. We always ate what they caught. I never remember a bad piece of fish. They seemed to look down a bit at freshwater fish as if it wouldn’t taste good, but that is not my experience at all.
It sounds like you live in a great neighborhood.

My in-laws liked to fish in the ocean, but they always did catch & release. I've only had fresh caught, freshwater fish served at home. My experiences were better than any fish I've had in a restaurant, but I'm sure sharing it with family had something to do with that.

Ordering in pizza tonight. A few family members have a cold so wanted to keep it simple.

Kind of wheaty, maybe. It's different, but not really a strong flavor. I think the texture is the biggest difference. It's a bit chewier than regular pasta... but so much lower in carbs, I don't mind at all. It holds up well with tomato sauces, and "plain" with butter and parmesan.
We use them with pasta sauce.......not as good as "real" noodles but for me better than zucchini "noodles".
I just use a little because I don't really care for the taste. DH likes them just fine.
Low carb is why we use them

Eating light tonight cause I’m planning my version of a Passover Seder for the man’s baby bro in the coming week or so; more on that later. I've a kinda strange constitution: when I think or cook a lot of food it, it lowers my desire to eat it 🤷🏽‍♀️.

So back to this evening. It’s a cup of tomato ginger broth and a chef’s salad with roasted chicky breast instead of turkey. A dish of vanilla gelato with fresh strawberries for dessert.
 
We had grilled Turkey burgers with cheese, avocado, and bacon on brioche buns with pasta salad for lunch. The plan for dinner is chicken fried rice, but if we aren’t hungry I’ll push it to tomorrow.

Update: I ended up making the chicken fried rice. I used up the last of a Costco rotisserie chicken, a half bag of frozen peas, and the last two carrots in the bag. It was a good fridge clean out meal.
