1/4 cup butter, softened
1/4 cup xylitol (or Splenda, or equivalent)
1 egg
1/2 cup almond flour (meal)
1/4 tsp. baking powder
1/4 tsp. lemon extract
1/4 tsp. vanilla extract
Cream butter and Splenda well. Add egg, beat well.
Mix almond flour with baking powder and add egg to mixture. Mix well. Add lemon and vanilla extracts.
Pour into small casserole dish or ramekins. Microwave on High for 3-4 minutes.
Makes 2 nice servings... great plain, or with fresh berries and whipped cream.
Notes: I have small casserole dishes that hold 500ml... I would guess it's about the same volume as two small ramekins. My old microwave takes about 4 minutes, my newer microwave takes 3 and change... sometimes a little of the sugar substitute will start browning, but it's not burnt. You'll have to experiment a little.)
