The one I had a couple weeks ago was thick, but not 2 inches thick so I'd imagine it would be easy to prepare it well without butterflying.
Now that you said that, that is exactly what our server said to us, "butterflying" . I didn't know what it meant, just shows what I know. Nothing much. Who knew Ice wine was a dessert wine? Not us either. She must have thought we were a table of real winners! I do know this. I liked LeCellier, it was a very good steak and nice place to eat.
