how long of a walk is it to Nine Dragons restaurant in Epcot from the Yacht club or should we go by boat?

Its not a terrible walk at all. I'd walk before taking the boat, it will be faster. The boat from YC first stops at BW before continuing on to Epcot. You'd be at Epcot before the boat left BW if you walked.

Taking the boat will take about 30 minutes longer than walking and will save you maybe 2/10 of a mile of walking.

0.9 mi. by Google Maps. Walking past Canada & Mexico is slightly shorter than past France, Morocco, etc.

Walk to the IG and into the park. If you took the boat from YC it would stop at BW first, so just walk. If you wanted to take the boat within the park you'd have to take it from the dock near Mexico. And it would take you all the way to Germany. You are better off walking from IG, past Britain and Canada, toward Mexico, Norway and China.

Agree with everyone to just walk from YC to IG. What we would do is look to see where the Morocco boat once we get to the main walkway. If it's heading toward Morocco, I would walk that way (right) and get on the boat. If not, I would keep walking past England and Canada (Left).

I would take the long way though. Turn right an go through France. The you can enjoy a Grey Goose Slushie during the walk. Just Sayin.

I'd keep walking if I were you. There's a reason it's an easy reservation
